Equipment

  • Medium mixing bowl
  • Fork or potato masher
  • Sharp knife
  • Cutting board
  • Measuring spoons & cups
  • Food processor (optional)
  • Spatula or spoon

Ingredients

  • Ripe Camembert cheese
  • Softened butter
  • Cream cheese
  • Finely chopped onion
  • Wheat beer or lager
  • Sweet paprika
  • Caraway seeds
  • Salt
  • Black pepper
  • Optional: Mustard

Instructions

  • Prepare the Cheeses: Start by removing the rind from the 8 ounces of ripe Camembert cheese if it's too thick (optional for texture). Cut it into small cubes. In a mixing bowl, add the cubed Camembert, 4 ounces of cream cheese, and 4 tablespoons of softened butter. Let them sit at room temperature for 10 minutes if they're cold—this makes blending easier.
  • Mash and Mix: Using a fork or potato masher, mash the cheeses and butter together until creamy and well combined. This should take about 2-3 minutes. If using a food processor, pulse briefly to avoid overmixing.
  • Add Flavorings: Stir in the finely chopped onion, 1 teaspoon sweet paprika, 1/2 teaspoon caraway seeds, 1/4 teaspoon salt, and 1/4 teaspoon black pepper. If desired, add 1 teaspoon mustard for extra zest.
  • Incorporate the Beer: Gradually pour in 2-3 tablespoons of beer, mixing until the mixture reaches a spreadable consistency. The beer adds a subtle malty flavor and helps bind everything.
  • Chill and Serve: Cover the bowl and refrigerate for at least 30 minutes to let the flavors meld. Your homemade obatzda recipe is now ready—serve chilled or at room temperature.
